Pizza dough
Open oven
Ingredients: for 10 pizzas
1 kg flour
300 g milk
300 g water
20 g salt
20 g baker's yeast
2 tablespoons olive oil
Preparation: 30 minutes + 1hour to rest
Baking time: 2 minutes.
All ingredients have to be at room temperature; (except the yeast: it stays
refrigerated.)
Blend all ingredients for 10 to 15 minutes , without the olive oil. Now add
the olive oil and knead for another 5 minutes.
The dough temperature should be around 24°C.
Let the dough rise for one hour in a container covered with plastic foil.
Divide the dough into 150 - 170 g parts and shape them into balls. Sprinkle
with flour.
Let rise for another 45 minutes , under a dish cloth to avoid drying.
The dough is ready to spread.
If it is to be frozen, this is the right moment.
