Duck skewer

Open oven cooking

Ingredients for 4 persons.

You'll need :

  • 2 duck breasts.
  • Olive oil.
  • Salt.
  • Pepper.
  • Crushed island berries.
  • Powdered spices, various.

Preparation time: 20 mins.

Equipment: a grill, 8 wooden skewers/

Cooking: about 8 minutes.

Preparation :

The embers arranged in a crown, without flames.

  1. Thread, lengthwise, 4 skewers per duck breast.
  2. With a sharp knife, cut between each peak to obtain beautiful skewers. With a brush, brush the skewers with oil and pass them through the spices. Leave to macerate for an hour.
  3. Bake on a grill. Monitor cooking.
  4. Serve with grilled tomatoes and a few potatoes baked in ashes.

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
