Preheat the wood-fired oven until it reaches about 200°C.
Remove the lid from the Mont d’Or cheese and gently hollow out the center. Add finely chopped garlic, pour in the white wine, and season with pepper. Optionally, add a sprig of rosemary or thyme for extra flavor.
Place the lid underneath the box to insulate it from the hot surface, then wrap the entire box in a sheet of aluminum foil.
Place the cheese in the oven and bake for 20–25 minutes, until the Mont d’Or becomes perfectly melted and creamy.
