Wood-fired Mont d’Or cheese

The ultimate autumn and winter recipe: Mont d’Or cheese baked over a wood fire. Simple to make, utterly delicious to eat !

  1. Preheat the wood-fired oven until it reaches about 200°C.

  2. Remove the lid from the Mont d’Or cheese and gently hollow out the center. Add finely chopped garlic, pour in the white wine, and season with pepper. Optionally, add a sprig of rosemary or thyme for extra flavor.

  3. Place the lid underneath the box to insulate it from the hot surface, then wrap the entire box in a sheet of aluminum foil.

  4. Place the cheese in the oven and bake for 20–25 minutes, until the Mont d’Or becomes perfectly melted and creamy.

  5. Serve hot with your favorite sides such as potatoes, charcuterie, and a slice of rustic country bread.

Cooking tip: Vary the recipe with diced ham, truffle, or mushrooms for a sophisticated flavor.
