Ingredients: For two loaves.

You'll need :

  • 500g type 45 flour.
  • 250 g caster sugar.
  • 250 g of chestnut honey for example.
  • 2 Mustard glasses of hot milk.
  • 1 C. heaped coffee of sodium bicarbonate.
  • 1 C. heaped tablespoons ground green anise

(The coffee grinder is ideal for grinding these aromatic seeds.)

If the seeds are not ground, provide 2 large tablespoons of seeds.

Preparation time: 15 mins.

Equipment: 2 cake molds.

Cooking: 1 hour at 160°C – 170°C

Preparation :

  1. Mix well while dry: flour, sugar, baking soda and anise. This avoids sifting the flour.
  2. Melt the honey in the hot milk and incorporate them, mixing well in the flour.
  3. Pour into previously buttered moulds.
  4. Cooking should be slow and moderate.
  5. This bread without fat or eggs can be kept for ten days in a dry place. It gains in flavor over the days and is eaten in thin slices.
