Cinnamon Christmas stars

Ingredients For 50 to 60 stars

Dough :

  • 120 g egg whites (approx. 4).
  • 400 g slivered almonds.
  • 350 g caster sugar.
  • 20 g cinnamon.

Topping :

  • 60 g egg whites (2 whites).
  • 400 g powdered sugar.
  • 300 g almonds for finishing.
  • 100 g topping sugar.

Preparation: 25min - cooking time 15min

  1. For the dough: Carefully mix the egg whites, almonds, powdered sugar and cinnamon. Store this mixture in aluminum foil in the fridge overnight, and adjust the consistency if necessary by adding almonds if the dough is too wet.
  2. For the sugar topping: Stir the sugar into the egg whites until the ideal consistency is reached, then cover the mixture.
  3. Roll out the dough, adding flour if necessary to prevent sticking. Add the remaining almonds, roll again and use a cookie cutter or knife to shape the stars.
  4. Bake in a wood-fired oven at 150°C for around 15 minutes, keeping the oven closed.
