Our rotating-floor bread ovens are designed for the most rigorous bakers who are looking to combine high-quality baking, ease of use and maximum productivity.
These separate side firebox back ovens are characterised by their rotating floor, driven by an electric motor located beneath the baking floor.
Precise cooking, simplified operation
Our rotating-floor bread ovens are direct-fired.
As with all our separate side-fired ovens, you can bake several batches in succession before easily reheating the oven.
The key difference actually lies beneath the baking room. A central shaft driven by an electric motor rotates the baking floor, both during preheating and baking, ensuring unrivalled temperature uniformity.
When loading or unloading the oven, the baker stops, moves the baking floor forwards or backwards with great precision using a joystick. The process is straightforward and a short peel is all that is needed.
Undeniably superior cooking capabilities
As the baking floor can be used in its entirety, our rotary bread ovens have significantly higher production capacities than those of a static floor oven.
If, for example, you decide to bake baguettes, you can bake 7.58 kg of dough per hour per square metre in our rotary ovens, compared with 5.60 kg in our static floor models – that’s an extra 35 per cent capacity !

Embellished with beautiful ears of wheat, this cast-iron door features an automatic closing system, so that the baker can open and close it with his peel. You can also use a handle with a counterweight to manipulate it in a more traditional, effortless way.
We reworked the original model in our workshops to integrate a glass section and a lamp in order to illuminate the baking chamber.
