Caramel custard

Closed oven cooking

Ingredients for 4 persons :

You'll need :

  • 1 half liter of pasteurized milk
  • 6 eggs
  • 2 packets of vanilla sugar
  • 2 Tablespoons of powdered sugar
  • 1 bottle of liquid caramel

Preparation time: 15 mins

Equipment: Springform pan and gratin dish for bain-marie.

Cooking: in a bain-marie, 40 min or more if necessary 100 to 120°C.

Preparation :

To cook slowly the day after the batch.

  1. Line the bottom of a springform pan with caramel.
  2. Beat the eggs with the sugar and add the milk.
  3. Gently pour the mixture over the caramel, so as not to mix the two liquids. The mold having already been placed in the gratin dish.
  4. Place your two dishes, one inside the other, at the entrance to the oven and then pour the water for the bain-marie.
  5. Push the assembly and close the doors for about an hour. Under no circumstances should this mixture boil and should not be moved.
  6. To obtain a creamy flan, cooking must be done at a low temperature and for a long time.

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
