Dried fruits with spices

Cooking in an open oven or closed oven

Ingredients :

You'll need :

  • 250g dried apricots
  • 250 pitted prunes
  • 3 glasses of full-bodied red wine
  • Some water
  • 2 tbsp. honey
  • The peel of half an untreated orange
  • 1 C. heaped coffee cinnamon
  • 1 C. vanilla coffee
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1 pinch of cloves
  • 1 pinch of pepper

Preparation time: 10 mins

Equipment: a terrine with lid.

Cooking: 20 min in the presence of the flame or 1 hour or more at 160°C – 170°C

Preparation :

  1. Place the prunes in the bottom of the terrine. Arrange the honey, orange peel and all the spices on top. Add apricots and wine. Fill with water to completely cover the fruit.
  2. If the cooking is intense in an open oven: simmer for a few minutes and watch the cooking.
  3. If the cooking is slow and moderate, the fruits can preserve for several hours, the juice is then a syrup very rich in flavors.
  4. In flared cups, arrange the fruits and their still hot syrup around a scoop of ice cream. Serve quickly.

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
